Acid Reduction Solution (potassium carbonate) can be used to reduce the acidity of the initial must or the finished wine.
Add the solution to a bottle of wine a teaspoon at a time and shake between each addition until the acidity is reducted by the desired amount.
If the acidity is known accurately by titration, then the addition of 2 teaspoons, 10cc, of solution to 1 gallon of wine will reduce the acidity 1 part per litre (1ppl) as sulphuric acid.

Use an Acid Test Kit or ph test strips to determine the acidity of your wine.
